It's perfect that my mother's baked apple pancake recipe seems to have launched me back into the kitchen after a month or so of lethargy and a poor, poor appetite.
Baked Apple Pancake
The apples:
- 2 Tablespoons butter
- 1/4 cup brown sugar
- 2 teaspoons cinnamon (I add one because Slim isn't a huge fan)
- 3 apples (peeled and sliced)
The batter:
- 1/3 cup flour
- 1/2 teaspoon baking powder
- 3 eggs
- 1/3 cup milk
- 1/3 cup sugar
Melt the butter in a pie plate. (I put the whole thing in the oven as it's pre-heating.) Sprinkle sugar and cinnamon over the melted butter, and mix. Add apple slices and bake for 12 minutes.
Pour batter over apples, and bake at 375 degrees for 15-20 minutes, or until brown on top. Loosen the edges with a knife, and invert onto a serving plate.
Incredibly easy, incredibly delicious. My mother used to serve this at her fabulous brunches, along with different kinds of cheese, olives, fresh bread, bagels & lox, sliced tomatoes ... yum. I may have to resurrect the brunch tradition.

I really want to make this. Is it anything like a Dutch baby pancake?

I've never had those, but the recipes online look similar, I suppose. This recipe has a sort of ... sticky caramel-apple coating on top. But the rest looks the same, maybe?

This sounds absolutely delicious. Cinnamon and apples - a match made in heaven however you do it.
