Thank you thank you thank you, dear Internet friend who passed on this crazy-simple recipe (It's not even a recipe. It's a plan of action.) for crispy kale "chips"!
Throw lots of olive oil on it-- I used my hands to toss everything around, in my grandmother's bowl-- and then bake on a baking sheet for 15 minutes. At ... I'm guessing 350 degrees, but I can't remember the details. It worked, anyway.
Three things to remember:
- The bits of kale can't touch each other on the baking sheet, or it'll ... um ... steam itself, is what my friend said. I think.
- I'm pretty sure more than 30 seconds longer than 15 minutes would burn the kale to a crisp, so pay attention to what you're doing.
- Careful with the salt! I ruined a whole batch by panicking about the whole kale thing. (Kale! Ugh! I'm not sure I like kale! It's kind of chewy, and leaves just shouldn't be chewy! Must be generous with the salt!) Just remember-- I mean really remember-- that there's not much to kale leaves, and any salt will have HUGE impact. Seriously.
But wouldja' look at those pictures of Bee? She saw me take the kale out of the fridge. She saw me rip it into pieces and throw the stemmy bits into the compost bucket.
And then I called them "chips"-- and yeah, when they come out of the oven? They're crispy, just like chips.
And do you see? Do you see how she's absentmindedly stuffing her face with these chips, while playing video games at nick junior dot com? We played along with the whole, "No more chips until you finish your potatoes" thing, but honestly? If those kale chips were the only thing she ate for dinner tonight, I'd be so psyched.
Yay for dark, leafy greens!
I have been wanting to try this. I like kale okay but kale chips? I think I could love them. : )

delicious! we love them. even Olin who isn't so into vegetables. but they are very crumbly so mostly he just squishes them to smitherines in his hand and them licks them off. not so elegant, but effective. thanks for helping me get some greens into him!

also, 7-8 minutes on 325 convection was enough.

We finally tried this and we cooked them for 8 minutes. Plenty of time. We also left off the salt on a batch and put pepper and then a dusting of parm on another. They were all delicious! I am going to try these and put them on top of a salad sometime. Just yummy.
